CHICKEN - IN - A - POT 
1 med. fryer with skin removed

Place in a greased Dutch oven. Sprinkle with light salt and pepper. Several pats of butter (about 1/2 stick).

Quarter 5 medium potatoes and place around chicken. Slice 5 medium carrots crosswise (about 1/4 inch) and place on potatoes. Slice 1 large onion and place on carrots and across chicken. Quarter 4 apples (Rome or Granny Smith are best) and place over onions.

Sprinkle over all this according to your taste your favorite herbs. We use thyme, oregano, parsley and fresh ground pepper and fresh rosemary. Cover and place in 325 degree oven and bake for approximately 2 1/2 hours.
