CREAMY SCALLOP POTATOES 
8-10 potatoes, sliced between 1/8 and 1/4-in. thick
1/4 tsp. garlic
3 big tbsp. flour
2 tbsp. minced onions
1 1/2 tsp. salt
1 c. coffee non-dairy creamer
1 3/4 c. boiling water
4 tbsp. butter
Black pepper, optional

Grease 9 x 13-inch pan well.

Cut up potatoes, add garlic, onions, salt, coffee non-dairy creamer and flour. Then add boiling water and add butter on top. Sprinkle with black pepper if desired. Bake at 350 degrees for about 1 hour.
