MAINE SHAKERS CIDER PIE | |
1/2 c. boiled cider (2 c. boiled down to 1/2 c.) 1 tbsp. butter 1 c. brown sugar 1/4 c. water 1/4 tsp. salt 2 egg whites, stiffly beaten 1 unbaked 9" pie shell 1 tsp. nutmeg 2 egg yolks, beaten Place reduced cider in saucepan, add butter, sugar, water and salt. Simmer several minutes. Cool slightly and add beaten egg yolks. Fold in stiffly beaten egg whites. Pour into unbaked pie shell. Dust with nutmeg and bake in moderate oven, 350 degrees for 20 to 30 minutes until crust is browned and custard well set. Serves 6 to 8. |
