SKILLET MACARONI AND FRANKS | |
2 c. elbow macaroni 1 tbsp. salt 3 qts. boiling water 1 tbsp. butter 2 lg. tomatoes, sliced 1 c. sliced onion rings 4 turkey or chicken franks, cut into 1/2 " slices 1/2 c. shredded Swiss cheese Gradually add macaroni and salt to rapidly boiling water so that water contents to boil. Cook uncovered, stirring occasionally until tender. Drain. While macaroni is cooking, melt butter in a large skillet over low heat. Saute tomatoes and onions until tender, about 5 minutes. Add franks, cover and cook about 5 minutes. Stirring macaroni and cheese, Cover and cook until heated through, about, 5 minutes. Sprinkle with parsley. Serves 4, approximately 429 calories per serving. |
