LENTILS 
1/2 lb. lentils
1 onion
1 ham hock or sausage of your choice
Salt to taste
Pepper to taste
Garlic to taste

Wash lentils thoroughly. Soak in water 1 or 2 hours. Drain. In large pot, put lentils in cold water, about 3 inches above level of lentils. Cook for 45 minutes. Dice and brown 1 onion. Use large saute pan. Add lentils to onion mixture, slice sausages and add to mixture. Add enough broth to cover mixtures. Simmer over medium heat until tender. Can be stored in refrigerator for 2 weeks.
