SPEEDY CHILI ENCHILADAS 
8 flour tortillas
1/2 onion, chopped
1/2 lb. ground beef
1 can (15 1/2 oz.) chili without beans
1/2 tsp. salt
Dash pepper
1/2 lb. cheese, grated
American or whatever you prefer

Heat oven to 350 degrees. Saute 2 tablespoons onion and ground beef together. Add chili, salt and pepper, simmer covered 10 minutes. Brush tortillas on both sides with melted butter. Place 1 tablespoon chili mixture, 1 teaspoon onion and 1 teaspoon grated cheese in each tortilla. Roll up, place in baking dish. Spoon rest of chili mixture on rolled tortillas. Sprinkle rest of chopped onion and cheese over chili. Bake for 15 minutes.
