ORANGE ROUGHY WITH ASPARAGUS 
1 lb. fresh asparagus
1 (2 oz.) jar diced pimento, drained
2 tbsp. lemon juice
1 tbsp. butter, melted
1/4 tsp. dried whole thyme
1/8 tsp. garlic powder
1/8 tsp. pepper
6 (4 oz.) orange roughy fillets
Vegetable cooking spray
2 tbsp. chopped unsalted cashews

Clean and chop asparagus. Combine with next 6 ingredients. Arrange fish in 13 x 9 x 2 dish coated with spray. Spoon mixture over. Bake at 350 degrees for 20 minutes. Sprinkle with cashews at end. Serves 6.
