SPINACH PIE | |
1 lb. feta cheese 2 lbs. ricotta cheese 8 oz. cottage cheese 6 eggs 1 onion, finely chopped 1 lb. phyllo pastry sheets 2 tsp. salt 2 tsp. pepper 1/2 lb. butter 3 pkgs. frozen chopped spinach, thawed 1 tbsp. oil Saute onion in oil. Mix together onions, spinach, cheeses, eggs, salt and pepper; set aside. Spread melted butter on 10 x 15 inch pan bottom. Line pan bottom with 6 phyllo sheets, spreading each sheet with melted butter. Add spinach mixture, spreading evenly over phyllo. Cover mixture with 6 more phyllo sheets, spreading each sheet with butter. Bake at 350 degrees for 3 minutes. Remove cut into squares and continue baking until golden (approx. 30 minutes). |
