SPINACH AND ORZO PIE 
2 beaten eggs
3 c. cooked orzo (1 1/2 c. uncooked)
1 (15 1/2 oz.) jar chunky spaghetti sauce
1/2 c. shredded Mozzarella cheese
1/4 c. Parmesan cheese
1 oz. pkg. frozen spinach
1/2 c. ricotta cheese
1/4 tsp. ground nutmeg

Combine eggs, cooked orzo, 1/2 cup sauce and Parmesan cheese. Spread over bottom and sides of a 9-inch pie plate to form shell. Cook spinach, drain well. Stir together spinach, ricotta, nutmeg. Spread into bottom of pasta-lined plate. Spread remaining sauce on top of filling. Cover edge of pie with foil. Bake in 350 degree oven 30 minutes. Remove from oven. Top with shredded cheese. Return to oven. Bake 3 to 5 minutes or until cheese is melted. Let stand 5 minutes before serving. Makes 6 main dish servings.
