QUESADILLAS | |
1 lb. Jack cheese, shredded 1 (7 oz.) can California green chilies, chopped 12 corn or flour tortillas Butter, lard or salad oil for frying (optional) Mix shredded cheese and green chopped chilies. Divide into 12 equal parts. Place 1/12 of cheese mixture in the center of a tortilla. Fold tortilla over cheese mixture and pin shut with a small wooden skewer. Fry in shallow hot butter, lard or salad oil until crisp, turning occasionally. Drain on paper towels. May be just heated on each side on a medium hot ungreased griddle or frying pan, until the cheese has melted. May also be placed in the microwave oven to melt cheese. Makes 12. |
