EASY CHICKEN POT PIE 
3 tbsp. butter
1/2 c. chopped onion
1/4 c. flour
1/2 tsp. salt
1/8 tsp. pepper
1/2 tsp. poultry seasoning
2 c. chicken broth
2 c. cooked, chopped chicken
1 c. frozen peas and carrots, cooked and drained
4 unbaked refrigerated biscuits

Melt butter in skillet over medium heat. Saute onion in butter 8 to 10 minutes, stirring constantly. Blend in flour, salt, pepper, and poultry seasoning. Gradually add broth. Stir constantly while mixture thickens. Add chicken and peas and carrots. Heat until boiling. Pour into a 1 1/2 quart casserole dish, sprayed with Pam. Slice biscuits into quarters and place on top of chicken mixture. Bake at 450 degrees for 8 to 10 minutes or until biscuits are browned.
