WHITE BEAN SALAD 
1/4 lb. dried white beans or black-eye beans
3 tbsp. salad oil
3 tbsp. snipped parsley
Juice from 1/3 lemon
3 cloves garlic, minced
Black pepper, salt and cumin according to taste

Clean and wash beans thoroughly. Place in a saucepan and add water, bring to a boil, reduce heat. Simmer until beans are cooked. Drain beans and place in a salad bowl. Add the remaining ingredients and toss gently. If desired, use onions instead of garlic.
