LASAGNA WITH MEAT BALLS 
3 lb. lean beef
2 cloves garlic, chopped
1/2 tsp. salt
1/4 tsp. pepper
1 tsp. grated lemon rind
2 tbsp. olive oil
1 lb. lasagna, cooked & drained
1 lb. ricotta cheese, cut thin pieces
1 lb. mozzarella cheese
1 1/2 c. grated Parmesan cheese
Parsley, chopped
Lasagna noodles, 1 lb.

Salt and pepper ground beef. Fry and drain with garlic.

You can buy any favorite spaghetti sauce or make your own. My recipe is: 2 cans tomato paste 2 lg. onions, chopped 4-5 cloves garlic, chopped (lg. ones) 1/4 c. olive oil 2 tsp. basil 1 tsp. oregano 1/2 c. parsley, chopped Salt to taste 1/2 tsp. sugar

Chop onion and garlic; saute in oil. Break up tomatoes with clean hands by squashing them in large bowl after onions and garlic are sauteed (not browned). Pour in your tomato paste, stir with onions and garlic on medium heat, careful not to scorch. Keep stirring for a minute, then pour in your tomatoes, basil, oregano, salt, sugar, pepper and if you like it a little cayenne pepper (whole one) give the sauce a little spicy taste, not too hot that pepper, those long very thin ones, give. I hang them up to dry and they get red.

1/2 hour before it's finished throw in your chopped parsley. This is just your sauce which must simmer for at least 4 hours.
