MASHED POTATO DOUGHNUTS | |
1/4 c. melted butter 1 1/2 c. sugar 1 tsp. nutmeg (opt.) 4 c. sifted flour 1 c. seasoned hot mashed potatoes Confectioners' sugar 5 tbsp. baking powder 1 tsp. salt 2 eggs, beaten 1/2 c. milk Cream butter and sugar. Blend in mashed potatoes, then eggs. Sift dry ingredients together twice. Add to first mixture, alternating with milk. Chill dough two hours. Roll out 1/2 inch thick on lightly floured surface. Cut with doughnut cutter. Fry in deep hot fat (360 degrees) about one minute on each side. Fry one layer at a time and turn once. Drain on unglazed paper. Sprinkle with confectioners' sugar while warm. |
