CHICKEN CORDON BLEU | |
6 chicken breasts, boned 6 slices thin Polish ham 6 slices Mozzarella cheese 1/2 c. Italian bread crumbs 1/3 c. olive oil 12 toothpicks or more Skin breasts and beat lightly to flatten. Lay slice of ham covered with slice of Mozzarella cheese on each breast or half breast (halve cheese and ham) and roll up, pinning with toothpick. Heat oil while breading each rolled breast. Saute each breast to golden brown, remove, placing in ovenware. Place container in oven, cooking at 250 degrees for 25 minutes. Reheat leftovers in microwave until cheese bubbles. |
