GREEN TOMATO KETCHUP 
2 gal. green tomatoes, sliced
2 lg. onions, sliced
Salt
1/4 lb. mustard seed
3 to 4 tsp. of the following: Allspice, cloves, ground mustard, and ground ginger 2 tbsp. black pepper
2 tsp. celery seed
1 3/4 c. brown sugar

Place sliced tomatoes and onions in layers with salt between layers in a stainless steel kettle. Let stand 24 hours, then drain. Add rest of ingredients and cover with vinegar and boil for 2 hours. Strain through a sieve or put in blender. Bottle for use.
