PEANUT BUTTER CRISS-CROSS COOKIES | |
1/2 c. shortening 1/2 c. peanut butter 1/2 c. white sugar 1/2 c. brown sugar 1 egg 1 1/4 c. sifted flour 1/2 tsp. baking powder 3/4 tsp. baking soda 1/4 tsp. salt Cream together thoroughly shortening, peanut butter, sugars, and egg. Sift together and stir in flour, double acting baking powder, baking soda and salt. Chill dough in refrigerator. Roll into balls the size of small walnuts and place on lightly greased cookie sheet about 3 inches apart. Flatten with a lightly floured fork in a criss-cross pattern. Bake 10 to 12 minutes in a quick moderate oven preheated to 375 degrees until set but not hard. Makes about 3 dozen. |
