CHICKEN WITH VEGETABLE SAUCE 
1/2 head lettuce, sliced thin
2 lg. onions, chopped
1 fryer, cut into pieces
1 bay leaf
1 tsp. salt
1/4 tsp. thyme
Dash of pepper
2 carrots, shredded
1/4 c. water

In large electric skillet, layer lettuce, half the onion, chicken, seasonings, remaining onion and carrots. Add water. Bring to boil, reduce heat, cover and simmer 35 to 45 minutes or until chicken is fork tender. Makes 4 servings. 220 calories per serving.
