SUGARLESS APPLE PIE 
1 (12 oz.) can frozen apple juice concentrate
2 tbsp. butter
3 tbsp. quick cooking tapioca
1/8 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
6 to 7 c. peeled and thinly sliced Golden Delicious apples (about 2 1/2 lbs.)

Combine above ingredients in a wide frying pan. Simmer, covered, stirring gently occasionally, until apples are tender when pierced (about 15-20 minutes). Cool, cover, and chill up to 4 days. Bake pastry for single crust (9 inch pie). At least 2 hours or up to a day before serving, spoon cooled apple filling into crust; cover and chill thoroughly. To serve, sprinkle pie with 1/2 cup chopped nuts. Offer whipped cream, if desired.
