ITALIAN CHICKEN AND VEGETABLES 
4 chicken breasts
1 sm. purple onion
1 sm. bell pepper
3 pieces yellow squash
1 sm. can stew tomatoes
4 med. potatoes, quartered
3 carrots
1 tbsp. butter
1 pkg. dry Italian dressing

Layer vegetables in casserole dish. Dab butter on vegetables and pour 1/2 can of tomatoes over vegetables. Sprinkle 1/2 package of Italian dressing on top. Put skinned chicken on top of vegetables and pour remainder of tomatoes and Italian dressing on top of chicken. Cook at 350 degrees for 1 hour.
