CORNISH HENS WITH LINGUINE 
3 Cornish hens, split
1/2 c. butter
1/2 c. olive oil
2-3 cloves garlic
1 tsp. oregano
1/2 tsp. salt
1/2 tsp. basil
1/2 tsp. thyme
1/4 tsp. black pepper
1 c. fresh parsley

Wash hens and place in roasting pan. Blend all other ingredients in blender or food processor until parsley is finely minced. Brush both sides of hens with mixture and bake at 350 degrees for 60 to 90 minutes, basting once more after 30 to 45 minutes.

After basting, cooking 1/2 to 3/4 pound linguine. Toss cooked linguine with remaining parsley and butter mixture. Turn linguine onto a warm serving platter and sprinkle lightly with Parmesan cheese. Top with the hens and serve. Serves 6.
