1 1/2 oz. plus 1 tsp. of butter 2 c. of flour 2 tsp. baking powder 1/2 tsp. salt 1/8 tsp. cayenne pepper (and/or mustard powder) 3/4 c. Cheddar cheese (grated) 5/8 c. of milk Preheat the oven to 450 degrees. Sift the flour, baking powder, salt and cayenne into a mixing bowl. Add the butter, cut into small pieces. Rub the butter into flour mixture with your fingertips until the mixture resembles coarse bread crumbs. With a table knife, stir in the cheese and milk to form a soft dough. Form the dough into balls by hand. Cut the dough in to 8 pieces and form each piece into a 1/2 inch thick circle. Place the circles of dough, spaced well apart on a baking sheet. Bake for 10 to 15 minutes or until they have risen and are golden brown. Serve immediately. |
