BAKED CANDIED SWEET POTATOES 
6 to 8 sweet potatoes
3 sticks butter
3 c. sugar
1 tsp. vanilla

Boil potatoes in skins until semi-soft. Peel and cut into chunks. Layer in casserole dish. Melt sugar and butter on low heat. Add vanilla and pour over potatoes in baking dish. Bake until light syrup forms in dish.
