STRAWBERRY MOUSSE 
3 c. strawberries
1/3 c. ricotta cheese
12 (1 gram) packets Equal
1/2 tsp. vanilla
2 env. unflavored gelatin
3/4 c. water
1/2 c. Carnation non-fat dry milk
1/2 c. ice water
2 tbsp. lemon juice
Strawberries for garnish

Hull strawberries; puree in blender (should measure 2 cups). Add ricotta, Equal and vanilla; blend until smooth. Soften gelatin in 3/4 cup water in small saucepan. Heat to dissolve, blend into mixture in blender. Pour into medium bowl. Chill until mixture mounds on a spoon. Combine dry milk, 1/2 cup ice water and lemon juice in small mixer bowl. Beat on high speed until stiff peaks form, about 6 minutes. Fold into strawberry mixture. Spoon into dishes. Chill until firm, about 2 hours. Garnish with strawberries.
