SKIER'S DELIGHT DATE CAKE 
1/2 cup (1 stick) butter
1 cup sugar
1 egg
1 cup cake flour
1 tsp. vanilla extract
1 cup chopped dates
1 cup boiling water
1 tsp. baking soda
1/2 cup chopped walnuts (optional)
Whipped cream (optional)

Cream together butter, sugar, and egg. Beat in flour and vanilla. Set aside.

In another bowl, mix dates, boiling water and baking soda. Let stand 10 minutes. Add to first mixture. Stir in nuts, if desired. Pour into well greased 8x8-inch pan.

Bake at 375°F for 30 minutes or until toothpick inserted in center comes out clean.

Note: Very good served warm with whipped cream. Recipe can easily be doubled.

Makes 6 to 8 servings.

Thank you for posting this, whomever did it! I had it, but can't find it now. I tried another recipe, but it wasn't the same. This is an amazing treat!

Add other chopped dried fruit: cherries, apricots, raisins, etc. to make it even better. I use approx 1 1/4 cups of fruit, by using 3/4 cup dates, then make up the remaining 1/2 cup with other fruit, softened with the dates.
