DOUBLE CHOCOLATE MINT CHIP
COOKIES
 
1 (10 oz.) pkg. mint chocolate morsels (1 1/2 c.)
1 1/4 c. flour
3/4 tsp. baking soda
1/2 tsp. salt
1/2 c. butter, softened
1/2 c. firmly packed brown sugar
1/4 c. sugar
1/2 tsp. vanilla
1 egg
1/2 c. chopped nuts, if desired

Preheat oven to 375 degrees. Melt morsels over hot (not boiling) water and stir until smooth. Remove from heat and cool. In a bowl combine flour, baking soda, and salt; set aside. In a bowl, combine butter, sugar, brown sugar and vanilla; beat until creamy. Add half of melted morsels and eggs; beat well. Gradually blend in flour mixture. stir in remaining melted morsels and nuts. Drop by rounded tablespoonful onto ungreased cookie sheets. Bake at 375 degrees for 8-9 minutes before removing. Makes about 1 1/2 to 2 dozen.
