SPICY SHRIMP 
1/2 tsp. soy sauce
1/2 tsp. sugar
1/2 tsp. ground coriander
1/2 c. chicken stock
1 lb. shrimp, shelled and deveined
1 tsp. dry sherry
1 egg white, lightly beaten
1 1/2 tsp. cornstarch
2 tbsp. peanut oil
1/2 tsp. dried red pepper flakes
1/2 c. thin diagonal celery slices
8 Chinese dried black mushrooms
1 tsp. cornstarch mixed with 1 tsp. cold water

Soak in 1/2 cup hot water 20 minutes; drain. Discard stems and cut caps in thin strips.
