KENTUCKY PEGASUS PIE | |
1 cup semi-sweet chocolate chips 1 cup English Pecans or Walnuts 2 eggs, beaten 1 cup sugar 1 stick butter, melted and cooled 1/2 cup plus 2 tablespoons flour 1 tsp. vanilla Rev up that mixer, don your derby cap and get baking! This simple-to-prepare pie is a tradition that has long been associated with the Famous Kentucky Derby Horse Race. A "Pegasus" parade takes place in Kentucky around the time of the Kentucky Derby. This home-made version can't be found in any store! Mix sugar and flour, add eggs; add butter. Add nuts, chocolate chips, and vanilla. Pour into an unbaked pie shell.
