CHICKEN PARMIGIANA 
6 oz. boneless chicken, cut into cutlets
2 oz. bread, toasted and made into crumbs
1 egg, beaten
12 oz. tomato juice
Pinch of garlic powder, basil, pepper
2 oz. Mozzarella cheese, shredded
Parmesan cheese

Dip chicken cutlets into beaten egg and then into crumbs. Place on a cookie sheet sprayed or brushed with olive oil and bake at 350°F for 45-50 minutes or until cooked through. Place tomato juice, garlic powder, basil and pepper in a saucepan and simmer until thick.

In a casserole dish, pour half the sauce then the chicken and remaining sauce. Sprinkle cheese over.

Bake at 350°F for 20 minutes or until cheese melts.
