CARROT CAKE 
1 1/2 c. salad oil
4 eggs
2 tsp. baking soda
1 tsp. salt
2 tsp. vanilla
2 c. sugar
2 c. flour
2 tsp. baking powder
3 tsp. cinnamon
1 c. chopped nuts
3 c. grated carrots

Combine sugar and oil. Add eggs and mix well. Sift flour, soda, baking powder, salt and cinnamon together. Add to sugar mixture; mix well. Add vanilla extract, carrots and nuts. Pour into greased and lightly floured pans. Bake at 325 degrees until done. Makes 2 loaf cakes or one 3 layer cake. Baking time depends on pan size. May be 45 minutes or longer.

CREAM CHEESE ICING:

1 stick softened butter
1 box powdered sugar
8 oz. softened cream cheese
2 tsp. vanilla

Combine all ingredients and mix well. Spread evenly on cake and drizzle down sides. If you use loaf pans, slice cake down middle to make layers and ice middle as well as top. Refrigerate.
