APRICOT NUT BREAD (MICROWAVE) | |
3/4 c. water 3/4 c. chopped dried apricots 1/3 c. raisins 3/4 c. brown sugar 3 tbsp. cooking oil 1 egg, slightly beaten 1/2 c. chopped nuts 1 1/2 c. unsifted flour 1 tsp. baking soda 1 tsp. salt 1. Combine water, apricots and raisins in 2 cup glass measure. 2. Microwave for about 2 minutes on High or until boiling. 3. Combine brown sugar, oil and egg; mix well. Stir in fruit mixture and nuts. Add remaining ingredients; stir. Pour into (9 x 5 inch) glass loaf dish. 4. Microwave for 6-8 minutes on half power (5). 5. Microwave for 3-3 1/2 minutes on High or until toothpick inserted near center comes out clean. |
