BAKALAVA
1 lb. pastry sheets (phyllo)
1 1/2 c. melted butter
1 lb. walnuts or almonds, chopped fine
1/2 c. dry bread crumbs
1/4 c. sugar
1 tsp. cinnamon
1/2 tsp. cloves

FOR THE SYRUP:

4 c. sugar
2 c. water
Juice of 1 lemon

Serves about 30.

Place 1 pastry sheet in well buttered 9x13 pan and brush with butter. Place second pastry sheet on top of first - butter again. Repeat until 6 layers of pastry sheets have been built up.

Mix nuts, bread crumbs and sugar with spices. Sprinkle top pastry sheet thick with nut mixture. Place 2 buttered sheets over this. Repeat in same manner until all ingredients have been used, ending with 6 pastry sheets.

Brush top with remaining butter and trim edges with a sharp knife. Cut diagonal lines the length of the pan to make diamond shaped pieces. Sprinkle with water. Bake 350 degrees about 1 hour or until golden.

Prepare syrup by boiling sugar, water and lemon juice for 10 minutes. Pour hot syrup over cooked baklava. Let stand several hours before serving.
