CHEESE & SPINACH SOUFFLE 
1 tsp. chopped onion
1 c. grated cheese
Salt & pepper
1 c. thick white sauce (see below)
1 c. chopped cooked spinach
3 eggs, separated

Add onion, cheese and seasonings to white sauce and heat until cheese is melted. Add spinach and well-beaten egg yolks. Mix well. Fold in stiffly beaten egg whites. Pour into buttered loaf pan. Place in pan of hot water and bake at 350 degrees for 45 minutes or until firm. Serves 6.

THICK WHITE SAUCE:

2 tbsp. butter
1 c. milk
2 tbsp. flour

Melt butter in skillet. Add flour after taking pan from heat. Put back on low flame and add milk gradually. Heat and stir until thickened.
