CHEESE SAUCE FOR SPINACH SOUFFLE 
2 tbsp. butter
2 tbsp. flour
Dash salt
Dash white pepper
Dash tarragon, marjoram and paprika
1 c. milk
1/2 c. or more sharp Cheddar cheese, shredded
1/4 c. sour cream

In saucepan melt butter. Blend in flour, salt and pepper. Add milk all at once. Cook quickly, stirring constantly until mixture thickens. Remove from heat. Add cheese, stirring until melted. Stir in sour cream.
