TWO CHEESE SPINACH SOUFFLE 
3 eggs
1 pt. sm. curd cottage cheese
3 tbsp. flour
3 tbsp. buttermilk
5 oz. sharp cheese cut into cubes
1 pkg. frozen chopped spinach
1/4 c. fine dry bread crumbs
1 tbsp. butter, melted

Beat eggs, stir in cottage cheese. Sprinkle flour over mixture. Stir in milk and cubed cheese. Put spinach through a wire strainer to remove liquid. Stir spinach into cheese mixture.

This is my mom's old recipe that I have been in search of for years! I just couldn't remember how long to cook it and at what temp?? Apparently, they couldn't either. I went with 350°F for 20 minutes.
