HAITI PLATE NATIONAL 
1 c. dried kidney beans
1 1/2 tsp. salt
1 lg. onion
1 clove garlic
2 tbsp. oil
1/2 tsp. pepper
1/4 tsp. ground cloves
1 c. raw brown rice

1. Pick over and wash the beans.

2. Put the beans in a kettle with one quart of water; boil 5 minutes; remove from heat; add salt; soak one hour.

3. Chop garlic and onion.

4. Saute garlic and onion in 1 tablespoon oil.

5. Transfer garlic and onion, along with pepper and cloves, to a casserole.

6. Drain beans, reserving liquor.

7. Saute beans in 1 tablespoon oil and add to casserole.

8. Combine bean liquor and enough boiling water to make 5 1/2 cups; pour over casserole and bake at 250 degrees for 2 hours - beans soften.

9. Stir in raw rice and bake for another hour; add water if needed.
