COMPANY MEATLOAF | |
1 1/2 lb. lean ground beef 1 egg 3/4 c. crackers or bread crumbs (I like Italian bread crumbs) 1/2 c. chopped onion 2 (8 oz.) cans tomato sauce with cheese 1 tsp. salt 1/2 tsp. oregano 1/8 tsp. pepper 2 c. cubed Mozzarella cheese Combine beef, egg, crumbs, onion, 1/2 cup sauce, salt, oregano, and pepper. Mix well and shape into a flat rectangle on Saran Wrap. Roll up like jelly roll and press ends to seal. Bake in shallow baking dish at 350 degrees for 45-60 minutes. Drain excess fat. Pour remaining sauce over rice and bake additional 15 minutes. May be made in morning. Can be made in loaf pans. |
