BAKING MIX 
4 c. flour
1/2 c. non-fat dry milk powder
2 tbsp. double acting baking powder
1 tsp. salt (to taste)
1 c. vegetable shortening (butter)

Sift first 4 ingredients. Add shortening, mix until crumbly. Store mix in tight container. Mix replaces commercial baking mix.

BASIC BAKING MIX BISCUITS:

2 c. mix
1/2 c. milk

Combine to make a soft dough. Knead 10 times, lightly. Rest dough 5 minutes. Pat or roll in 1/2 inch thickness. Grease 9 inch pan. Bake at 450 degrees for 10-12 minutes. (Use judgment about hot oven degrees.)

BASIC BAKING MIX PANCAKES:

3/4 c. milk
1 lg. egg, beaten
1 1/4 c. mix
2 tsp. sugar, optional

Beat milk and eggs. Stir in mix. Let stand a few minutes. Bake as usual.
