APPLE CHUNKIES 
1 c. self-rising flour (sift before measuring)
1/4 c. butter
3/4 c. sugar or 1/2 c. sugar & sugar substitute equivalent for 1/4 c. sugar, suitable for baking
1 egg
1 tsp. vanilla
1/2 c. chopped raw apple
1/2 c. coarsely broken walnuts

Sift flour again. Melt butter in a saucepan; remove from heat and stir in sugar or sugar and sugar substitute. Cool slightly then beat in the egg thoroughly; add vanilla. Fold in the sifted flour. Stir in the apples and nuts.

Spread batter into a greased 8 x 8 inch baking pan. Bake in 350 degree oven for 30 minutes, or until golden brown. While still warm, cut into 2 inch squares.
