CHICKEN MILANESE 
4 boneless chicken breasts
4 c. Italian seasoned bread crumbs
2 tbsp. Parmesan cheese
1 tbsp. water
2 eggs, beaten
2 tbsp. butter
1 tbsp. olive oil
1 tsp. minced garlic

Place each chicken breast between 2 pieces plastic wrap and pound flat. Dip chicken breasts in egg wash (water and egg). Then coat with a mixture of the bread crumbs and Parmesan.

Heat butter and olive oil in a saute pan. Add garlic, saute a few seconds then place chicken breast in pan. Cook over medium hot heat about 5-7 minutes on each side, until browned (cooks quickly and is fork tender because of pounding). Good with noodles and a light tomato sauce.
