HEARTY OATS AND WHEAT BREAD | |
1 3/4 c. lukewarm water 1/2 c. honey 1/2 c. butter 2 eggs 3 pkgs. dry yeast 2 - 2 1/2 c. bread flour 1 c. rolled oats 2 c. whole wheat flour Combine water, honey, butter, eggs and yeast. Let set to dissolve yeast. Add remaining ingredients. Mix in mixer with dough hook or knead by hand, about 5 to 10 minutes, until elastic. Dough will be soft. Place in greased bowl. Cover and let rise until double, 45 minutes to 1 hour. Punch down and divide. Pat into 2 loaves. Place in greased 9"x5"x3" bread pans. Let rise for 45 minutes to 1 hour. Bake at 350 degrees for 30 to 40 minutes. Makes 2 loaves. Cool in pans for about 10 minutes then finish cooling on wire rack. I usually coat the top crust of baked bread by "buttering" it lightly with butter while hot. This softens the crust and makes it easier to slice after cooling. |
