LEMON CHICKEN DELIGHT 
4 half chicken breasts
4 tbsp. butter
3 tbsp. flour
2 c. sour cream
1 tsp. salt
1/4 tsp. pepper
1 c. sliced mushrooms
2 tbsp. chopped parsley
4 green onions, chopped
3-4 tbsp. lemon juice

Brown breasts in butter - remove from skillet and place in casserole dish. Stir flour into skillet, cook 1 minute. Add sour cream and seasonings. Simmer 4 minutes. Add mushrooms, parsley and onions. Stir in 2 tablespoons lemon juice. Pour sauce over chicken. Cover and bake 45 minutes to 1 hour at 350 degrees. Skim butter before serving, add remaining juice to taste.
