SHRIMP FRIED RICE 
1 c. rice, uncooked
3 eggs, beaten
1/4 c. bean sprouts
1/4 celery, chopped fine
3 tbsp. soy sauce
2 c. water
2 tbsp. cooking oil
1/2 c. green onions, finely chopped
1/2 lb. cooked shrimp, chopped
Salt & pepper to taste

Cook rice; set aside to cool. Heat oil in large skillet. Fry eggs until firm. Remove from heat and cut eggs in small shreds. Add onions, celery and bean sprouts. Saute for 10 minutes. Add rice and cook over low heat, stirring constantly. Add shrimp at same time as rice. Add soy sauce and seasonings. Stir until well combined.
