VEGETABLE CASSEROLE 
2 (16 to 20 oz.) bags carrots, cauliflower, broccoli mix
1/2 lb. Velveeta cheese
1 stick butter
1 sleeve Ritz crackers

Cook vegetables until thawed. Pour into 9 x 13 inch pan. Melt cheese and half of butter. Pour over vegetables. Crumble crackers and mix with 1/2 of butter. Sprinkle over top. Bake 20 minutes at 350 degrees.
