CANADIAN CHEESE SOUP 
1 lg. potato, finely diced
1 lg. onion, finely chopped
1/4 c. finely diced carrots
1/4 c. finely diced celery
1 c. water
2 c. consomme or chicken broth, canned
1 c. grated sharp cheddar cheese (1/4 lb.)
1/2 c. cream (20% butterfat)
2 tbsp. chopped parsley

In covered saucepan, simmer vegetables in water until tender, 10-15 minutes. Add remaining ingredients except parsley. Heat and serve garnished with parsley. Yield: 4-6 servings.
