LINGUINI WITH VEGETABLES &
CHEESE
 
1 (16 oz.) pkg. frozen vegetable mix (broccoli, cauliflower & carrots)
16 oz. ricotta cheese
8 pkg. linguini
1/2 c. sour cream
3/4 c. milk
1/2 c. Parmesan cheese
1/4 tsp. basil
1/2 tsp. oregano
1/4 tsp. garlic
Salt & pepper to taste

Cook vegetables as directed on package using salted water. Drain. Cook linguini as directed on package using salted water. Drain.

Combine ricotta, sour cream and milk, stirring thoroughly. Add Parmesan cheese and seasonings. Heat but do not boil. Toss vegetables with pasta. Add cheese mixture and serve.
