MIXED RICE PILAF 
1 tbsp. vegetable oil
1/2 c. gourmet brown rice blend
3/4 c. water
1 c. long grain white rice
1 (14 1/2 oz.) can chicken broth
Fresh chives or parsley, chopped

In 3-quart microwaveable bowl, combine oil and brown rice. Blend. Stir in water. Cover bowl with plastic wrap, turning back one corner to vent. Microwave on high for 2 to 3 minutes or until water boils. Microwave on medium 5 minutes or until rice is softened.

Add white rice and broth to bowl; microwave, covered and vented, on high for 5 minutes or until liquid boils. Cook on medium for 10 to 15 minutes or until all liquid is absorbed and rice is tender, stirring with fork several times. After cooking is completed, let rice stand, covered, on counter for 5 minutes. Transfer to serving dish; sprinkle with parsley.

Since microwave ovens vary in power, you may need to adjust your cooking time.
