DIET MUFFINS 
2 apples, chopped or 1 apple and 1/2 c. blueberries or strawberries
3 eggs
1/2 c. water
1/2 tsp. nutmeg
1 tsp. cinnamon
1 tsp. vanilla
1/4 tsp. almond extract
1 tsp. baking powder
1 tsp. baking soda

Place everything in blender; mix well. Add 2 cups wheat or oat bran in a bowl; stir in mixture. Spray muffin tins with non-stick spray. Spoon in mixture. Bake at 400 degrees for 20-25 minutes. Yield: 12.

Type of apple will affect taste - sweet, sour, etc.
