SPINACH WITH MUSHROOMS | |
1/4 c. salad oil 1/2 lb. mushrooms, thinly sliced 1 lb. spinach, torn into bite sized pieces 1 tbsp. cider vinegar 1 tbsp. prepared mustard 1 tsp. sugar 3/4 tsp. salt Saute mushrooms in hot salad oil 5 minutes (until tender). Mix with other ingredients and toss lightly to coat. 115 calories per serving (6 servings). High in vitamins A & C, and iron. Low cholesterol. |
