CRAZY CRUST PIE 
Crust:

1/2 c. flour
1/2 tsp. salt
1/2 c. sour cream
1/2 tsp. baking powder
1/4 c. solid shortening
1 egg

Mix ingredients. Batter will be slightly lumpy. Spread in pie dish.

Filling:

1 tsp. salt
2 tsp. chili powder (optional)
1/2 c. onion, chopped
1 (16 oz.) kidney or Ranch Style beans (undrained)
1 (6 oz.) can tomato sauce
1/2 c. lettuce, chopped
1/2 c. tomato, chopped
1/2 to 1 c. shredded Monterey Jack, Cheddar or American cheese

Preheat oven to 425°F. Combine all ingredients except lettuce, tomato and cheese. Mix thoroughly. Smooth into crust.

Bake 20 to 30 minutes until crust is a deep golden brown. Sprinkle with lettuce, tomato and cheese. Slice and serve like pie.
